Doughnuts:

 

Ingredients for doughnuts

1.5 cups self-raising flour

1/2 cup brown/ coconut sugar

3/4 cup coconut milk

1tsp vanilla extract

4 tbs coconut oil

2 tbs coconut yogurt

1tsp baking powder

 

Ingredients for black goji glaze

1/2 cup icing sugar, sifted

1/2 baobab powder

2.5 tbs coconut milk

1tbs coconut yogurt

3 tsp black goji berry powder

2 tsp acai powder

1/2 tsp blue spirulina

 

Method:

Preheat oven to 180°C

Sift flour into a mixing bowl, add the sugar +baking powder

Mix together.

Add coconut milk, coconut yogurt, vanilla and melted coconut oil + whisk

Place the doughnut batter into the donut tray evenly, using a spoon

Bake for 15 minutes until lightly browned on top

Remove from oven, let cool for a few mins before transferring to a cooling rack.

Allow to cool completely before adding the glaze

 

Black goji + acai glaze

Combine all the ingredients + whisk until smooth

When the doughnuts are cool, dip them in the glaze.
