Ingredients, Serves 4

  • 1 heaped tbsp of Vita Coco Coconut Oil
  • 2 red onions, chopped
  • 2 courgettes, sliced and halved
  • 1 large red pepper, chopped
  • A handful of green beans
  • A handful of baby corns
  • 160g cooked tofu pieces
  • 4 tbsp red curry paste
  • 800ml Vita Coco Pressed Water

 

To Serve (optional):

  • Chopped peanuts
  • Fresh coriander
  • Cooked rice

 

Method

Put the coconut oil into a large pan and once hot, add in the red onion and saute for a couple of minutes.

 

Next add in the courgette, red pepper, green beans, baby corns and tofu pieces. Cook for another couple of minutes before adding in 4 tbsp of red curry paste. Fry for a minute until nice and fragrant.

 

Pour in the coconut water and stir. Simmer for another 5-10 minute

 

Serve with rice, chopped peanuts, coriander and a squeeze of lime if desired.
