Ingredients, Serves 4
- 1 heaped tbsp of Vita Coco Coconut Oil
- 2 red onions, chopped
- 2 courgettes, sliced and halved
- 1 large red pepper, chopped
- A handful of green beans
- A handful of baby corns
- 160g cooked tofu pieces
- 4 tbsp red curry paste
- 800ml Vita Coco Pressed Water
To Serve (optional):
- Chopped peanuts
- Fresh coriander
- Cooked rice
Method
Put the coconut oil into a large pan and once hot, add in the red onion and saute for a couple of minutes.
Next add in the courgette, red pepper, green beans, baby corns and tofu pieces. Cook for another couple of minutes before adding in 4 tbsp of red curry paste. Fry for a minute until nice and fragrant.
Pour in the coconut water and stir. Simmer for another 5-10 minute
Serve with rice, chopped peanuts, coriander and a squeeze of lime if desired.
